Cheese is fermented milk from which a portion of the water and lactose has been removed.
There are 4 basic steps to making cheese:
- Curdling
- Draining
- Pressing
- Ripening
Once these 4 steps are complete, the cheese has been made! The unique flavor of each type of Canadian cheese type is due to one or more of the following:
- The kind of milk used
- The method of curdling milk
- The method of cutting and forming of the curd
- The type of bacteria or moulds used in ripening
- The amount of salt or seasonings added
- The conditions of ripening
